Time With The Ladies

Whenever I do anything with friends, Jay refers to it as my time with the ladies. As in, "Are you skiing with the ladies today?" Or, "I won't disturb you. You're with the ladies." It's a quirk of his to completely disappear if there are ladies around, as if all our concentrated estrogen makes him uncomfortable somehow. Funny man.

But, I do enjoy my time with the ladies. On Wednesday, I skied with my fab friends Lori, Lanae and Michelle. The entire morning was spent laughing and catching some sweet air. Actually, the laughing was usually a direct result of not catching that sweet air. Watch for Michelle, aka SuperG, at the next Olympics. Probably competing in the aerials, but maybe even in her namesake. Thanks to her, I have these pictures to share:


This is where I live.  When I really think about this, it's almost inconceivable to think that I could ever be grumpy.  This is what Beautiful looks like for me.

Yesterday, I hosted bookgroup at my house.   Ours is set up so that whoever hosts picks the book and provides dinner.  I served Jay's Chile Verde (NOT quick to make) Dominican beans and chipotle lime rice.  It was a nice evening.  Each month I feel more and more comfortable with these fine ladies.

Of course, Jay left with the boys for basketball practice and was comfortably gone for most of their visit, but he was asked to take this picture and was thus forced to be in the same room for a small period of time.  It's my little of way of making sure he gets time with the ladies too.

Wow...that really is beautiful. I love snow when it's sunny out. What a fun way to spend your day with your friends. Glad you had some fun "lady" time!

SOOOOO jealous of the skiing. I am starting a new book club next month. The 11th to be exact. Wish me luck!

I hosted a book club last night too, but I definitely did not cook dinner for everyone! That is impressive!

Glad you have lady time, especially doing something fun like skiing!

That is awesome that Jay is supportive of your ladies time! Take it from me...not all husbands are! ;) LOVE the photos on the mountaintop, how gorgeous is that!

Such a beautiful place to live. My kida are always so amazed at the mountains when we visit Utah. The mountains they see everyday here are more like little hills. My husband would love to get back to Colorado (he served in the Denver North mission).

What book did you read for your book club? I am always looking for new books to read...

Natalie - we discussed Still Alice, a book I read a while back. It made for a pretty good discussion, and everyone said they enjoyed the quick read.

Rebecca - here are some recipes:

Chipotle Lime Rice:
1 tsp oil
2 tsp fresh cilantro
2/3 C White basmati rice
1 C Water
1/2 tsp salt
juice of 1 lime

Heat oil over low heat. Add rice and lime juice, stir for 1 minute. Add water and salt, bring to a full rolling boil. At boiling, cover, turn down to simmer over low heat until rice is tender and water is absorbed, about 25 minutes. Add cilantro and fluff rice with fork.

Habichuelas rojas guisadas: (Stewed red beans)

2 C red kidney beans - cooked (I used canned)
1/2 C chopped celery
1 small red onion cut into four quarters
1 Cube of chicken buillion
1/2 tsp of coriander
1/2 tsp of cilantro
1/2 tsp of thyme leaves
1 T of tomato sauce
1 T of oil
1/2 tsp of minced garlic
1 pinch of oregano
salt

Heat the oil. Add oregano, onion, garlic, tomato sauce, celery and herbs, Stir and add two T of water. Add the beans and let simmer. When the water has almost evaporated, add the chicken buillion and two more Tbs of water and stir. Add the remaining water while mashing the beans over heat. Boil at medium heat until it reaches a creamy consistency. Adjust salt to taste.

Chile Verde:

1 1/2 lbs of tomatillos
5 garlic cloves, not peeled
2 jalapenos (I used serrano for less heat) seeds and ribs removed, chopped.
2 poblano chiles
1 bunch cilantro leaves, chopped

3 1/2 to 4 pounds of pork shoulder cubed
Salt
Freshly ground black pepper
Olive oil
2 yellow onions
3 garlic cloves, peeled and finely chopped
2 1/2 C chicken stock
2 Tbsp of chopped fresh oregano or 1 Tbsp of dried oregano
pinch of ground cloves

1. Remove papery husks from tomatillos and rinse well. Cut in half and place cut side down, along with 5 unpeeled garlic cloves, on a foil-lined baking sheet. Place under a broiler for about 5-7 minutes to lightly blacken the skin. Remove from oven and cool.

2. If you want the additional flavor of chiles other than jalapenos, you can add a couple of poblano chiles. Roast the chiles over a flame until blackened all around. Let cool in a bag, remove the skin, seeds and stem.

2. Place tomatillos, skins included, into blender or food processor. Remove the now roasted garlic cloves from their skins, add them to the blender. Add chopped jalapeno peppers, other chiles and cilantro to the blender. Pulse until all ingredients are finely chopped and mixed.

3. Season the pork cubes generously with salt and pepper. heat olive oil in large, heavy-bottomed skilled over medium high heat and brown pork chunks well on all sides. Work in batches so that the pork is not crowded in the pan and has a better chance to brown well. Using tongs, lift pork out of pan and place in bowl.

4. Pour off excess fat, anything beyond a Tbsp, and place onions and garlic in the same skillet and cook, stirring occasionally until limp, about 5 minutes. Add onion mixture, pork and chile verde sauce to a large soup pot. Add oregano, chicken stock (enough to cover the meat) and a pinch of ground cloves. Add salt and pepper to taste (but not too much as chile verde will continue to cook down and concentrate)

5. Bring to a boil and reduce to a slight simmer. Cook for at least 3 hours, uncovered, or until the pork is fork tender.
